Bolo de Limão com Ganache

Ingredientes:

Bolo:

  • 1 ¼ cup farinha de amêndoa
  • 1 cup de farinha de coco
  • 2 C/S de coco ralado
  • pitada de bicarbonato de sódio
  • pitada de canela
  • 4 C/S de mel
  • 1 limão (sumo e raspa)
  • ¼ cup de leite de coco
  • 3 ovos
  • 3 C/S óleo de coco (derretido)
  • Baunilha a gosto

Ganache:

  • 100 gr de chocolate negro (85%)
  • 1 C/S de leite de coco

Preparação:

Bolo:

  • Pré-aquecer o forno a 180ºC.
  • Untar uma forma redonda de ir ao forno com manteiga e polvilhar com farinha de amêndoa ou farinha de coco.
  • Colocar os ingredientes secos numa taça e misturar bem.
  • Em outra taça misturar os ingredientes líquidos.
  • De seguida juntar os líquidos aos secos e bater com a batedeira.
  • Adicionar os ovos 1 a 1 sem parar de bater.
  • Transferir o preparado para a forma e levar ao forno por 30 a 35 minutos.
  • Fazer o teste do palito.
  • Retirar do forno e deixar arrefecer um pouco.

Ganache:

  • Colocar os ingredientes num tacho e levar a lume brando até derreter mexendo sempre com uma colher de pau.
  • Colocar por cima do bolo e barrar até ficar todo coberto.
  • Decorar com coco ralado e raspa de limão (opcional).

  • Cup – 200 ml

Lemon Cake with Ganache

Ingredients:

Cake:

  • 1 ¼ cup of almond flour
  • 1 cup of coconut flour
  • 2 Tbsp of shredded coconut
  • pinch of baking soda
  • pinch of cinnamon
  • 4 Tbsp of honey
  • 1 lemon (juice and zest)
  • ¼ cup of coconut milk
  • 3 eggs
  • 3 Tbsp coconut oil (melted)
  • Vanilla

Ganache:

  • 100 gr of dark chocolate (85%)
  • 1 Tbsp of coconut milk

Preparation:

Cake:

  • Preheat the oven to 180ºC.
  • Grease a round shape for baking with butter and sprinkle with almond flour or coconut flour.
  • Place the dry ingredients in a bowl and mix well.
  • In another bowl mix the liquid ingredients.
  • Then add the liquid to the dry and beat with an electric mixer.
  • Add the eggs 1-1 stirring constantly.
  • Transfer the prepared for the form and bake for 30 to 35 minutes.
  • Do the toothpick test.
  • Remove from oven and let cool slightly.

Ganache:

  • Place the ingredients in a saucepan and bring to low heat until melted, stirring constantly with a wooden spoon.
  • Place on top of the cake and spread until all covered.
  • Decorate with shredded coconut and lemon zest (optional).
