Panquecas/Pancakes

Ingredientes:

  • 250 ml leite de coco
  • 4 C/S óleo de coco (liquido)
  • 4 ovos
  • 100 gr farinha de coco
  • 100 gr polvilho azedo
  • bicarbonato de sódio
  • pitada de canela
  • baunilha a gosto

Preparação:

  • Na liquificadora comece por bater o leite de coco, o óleo de coco e os ovos. Deixe bater até ficar bem liquido.
  • Adicione as farinhas e o bicarbonato de sódio a pouco e pouco.
  • Por fim adicione a canela e a baunilha e deixe bater por 1 minutos.
  • Numa frigideira previamente untada coloque uma quantidade suficiente e deixe cozinha por 2-3 minutos em lume brando, vire de deixe cozinhar novamente pelo mesmo tempo.
  • Sirva ainda quente com, frutas, iogurte grego, mel, etc.

Pancakes

Ingredients:

  • 250ml coconut milk
  • 4 Tbsp coconut oil (melted)
  • 4 eggs
  • 100 gr coconut flour
  • 100 gr sour cassava starch
  • baking soda
  • pinch of cinnamon
  • vanilla to taste

Preparation:

  • In the blender start by hitting the coconut milk, coconut oil and eggs. Let beating until thoroughly liquid.
  • Add the flours and baking soda, little by little.
  • Finally add the cinnamon and vanilla and let beat for 1 minute.
  • In a greased pan, place a sufficient amount and let cooking for 2-3 minutes on low heat, turn to cook again for the same time.
  • Serve still warm with fruit, Greek yogurt, honey, etc.
